I come here to create this issue. Right now the app doesn't remember the last subtitles that I used instead it choose English again every time I open the episode. I hope the devs fix this, it's more like a bug not feature request

The option for subtitle is there already

Settings > Player > Subtitles > A. Auto Select language B. Downloaded Languages

Likewise the option to select quality for buffer/data usage reason is also available

Settings > Player > Preferred Watch Quality

It doesn't always select my preferred source if there are multiple source with the same quality but that doesn't happen often
