Users editing in the table wants to set an optional string to null

Nope - the issue will be closed once fixed.

I'd just like to add that when I accidentally get the focus on an object's string field that was initially null it will get overwritten by an empty string. I can't seem to prevent this from happening, nor can I undo this.

So to me this will not be just any kind of feature; it will also increase my productivity when using this app as I will make less errors. 💪
