Remove SimpleImageViewer from EnvRunnerV2

[TTF2050]

Why are these changes needed?

Gymnasium no longer supplies a SimpleImageViewer class. The issue was further compounded by logic that deactivated all rendering as a side effect of the missing object (even if the env would handle its own rendering window). Removed all the offending bits.
