In the 0.5.0 release, some files appear to be missing

Hey team, hope you're all having a fantastic week and thanks for such an amazing contribution!

In the 0.5.0 release, some files appear to be missing:

For example, https://github.com/ray-project/ray-llm/blob/master/serve_configs/thenlper--gte-large.yaml

References an embedding_models subfolder which does not exist in the commit nor in master.

Could we please get an example of embedding config :)
