EVPN is supported (only) for NXOS among the Cisco platforms. A small example from tests: https://github.com/batfish/batfish/blob/master/projects/batfish/src/test/resources/org/batfish/grammar/cisco_nxos/testconfigs/nxos_evpn
That vendor will have to have to be added. some notes are at https://github.com/batfish/batfish/wiki/Developer-notes. if you want to take that on, I'd recommend joining #dev on Batfish Slack workspace.

Is the default route explicit somewhere or needs to be inferred?
@anothermattbrown can confirm but my understanding is that the forwarding/reachability across the overlay/underlay divide is not supported. You can either analyze the underlay or the overlay.
