Altherma 3 RF data logging on SD card

Hello everyone, not being particularly experienced, I was wondering if the microcontroller resources that are suggested for this project (ESP32) would be OK for logging data to text files inside an SD card with a respective SD module. To have a time reference I would request the time from an external ntp server.

I am not interested in sending the data to any platform (NodeRED + dashboard) but only in logging it for later analysis. If I wanted to do this, could you tell me at which point in the code I should enter the variables in the SD text file?

Also, could someone please direct me to the exact code of an ESP32 with which this could be realised? I don't know if it's possible to include links to the shop, but at least the exact name of the device.
