Open Data are online, free of cost, accessible data that can be used, reused and distributed provided that the data source is attributed and shared alike.

So you are looking for astronomical data resources or any/all free data? You could probably make a pretty exhaustive list of astronomical data sets. Beyond that, it would be pretty tough to get a comprehensive list.

I was looking for more along the lines of how-to make your own astro data open/reusable. For example, research data management best practices (e.g. how to write a data management plan), where to deposit datasets (e.g. VizieR, Zenodo, institutional repositories), metadata, FAIR (Findable, Accessible, Interoperable, Re-usable) metrics, licensing, etc.
Where to find open data in astronomy definitely fits into this perfectly, but maybe more generally vs an exhaustive list of data that's already openly available (although maybe that's also something we could start and people could add to it over time?). Use of VizieR, Simbad and the CDS in general would be included. Raw and/or pipelined telescope data are usually stored on observatory archives so that would be easy enough to refer to, but calibrated datasets from publications are trickier.
