Is the idea that the attendee is willing to share this information with organizers only, just not have it displayed publicly? I think that makes sense -- it could be a toggle on the profile page to start with.

agree that it would be a good idea to allow attendees to be anonymous, or maybe a screen name, then they would have a unique identifier for if organizer wanted to display for sorting.

We don't really need their real names at all... just some way for them to identify themselves at registration. Once simple fix would be to add text that name can be pseudonomous. Also, we really shouldn't require two names. In some countries, like India, it is common to have a single name:
