Add Athlytics package to Bioinformatics and Biostatistics section

This PR adds the Athlytics R package to the awesome-R list. Athlytics is an academic R package for sports physiology analysis, providing standardized functions to calculate and visualize key physiological indicators including ACWR, Efficiency Factor, and training load metrics.

The package has been added to the "Bioinformatics and Biostatistics" section in alphabetical order.
