How to modify header text and values on POT files

The default text shows some default values (PROJECT, EMAIL@ADDRESS, PROJECT VERSION...) that I don't know how to change for my project. I read the relevant part on Babel documentation but I don't still understand how should I run this? On pybabel extracting command? On messages.cfg file?

I would appreciate some help on this :)
