Add nightly tests for main branch

We should add nightly tests that run on the main branch so that we can ensure changes from things like pdk-templates aren't causing issues and going un-noticed.

The implementation should be simple. We would need to copy the current acceptance test workflow & change the trigger to a cron. Examples of this can be found in most of our modules:
