Expand scope of contributor list
https://github.com/publiclab/community-toolbox/pull/11 starts this off, but we need to break this up as it's complex.
@RichardLitt suggests https://github.com/RichardLitt/name-your-contributors which is great

Hi @jywarren, for this to happen we need to incorporate a bot which will trigger a new Pull Request for every new addition to the contributors' list. It requires a bit of manual work...what are your thoughts?
Hm. I'm not sure. Could it be a GitHub Action? Or something?
