Update Dockerfile

As there are no more builds published on https://hub.docker.com/r/prosody/prosody/ I tried building myself. As the Debian 10 image doesn't contain lua-unbound, required by the latest prosody packages, and Debian 11 is available since quite some time I rebased the image on Debian 11. "Works for me", but more testing than that would probably be advised before merging into main :)
