Personally I'm not a big fan of AppImage as a format, but I'll be okay with it if you or someone sent a pull request for it.

Ideally only one window should be there, and trying to open a second instance with another url should just replace the url in the one window.

GTK is a solid choice, since you're already using GLib. In addition, it makes easier to write responsive apps using Libhandy.
