Presenting Capsule Proxy metrics with a Grafana dashboard

As #596 is completed, the new metrics exported by the Capsule Proxy must be exposed in a Grafana dashboard in order to provide more visibility on this component.

Let's evaluate if using a new dashboard, or rather, the Capsule one.
