docs: explain mxGraph perimeter and projection

WIP This is an early work in progress that won't be completed before September 2022 Currently, this PR contains my unordered personal notes and some contents are in French.

It includes information gathered during development of #1868 and that will be useful for #1870.

Remaining Tasks (more may be needed)

  • [ ] add doc in the code about what we do in the custom BpmnGraphView
  • [ ] finalize doc
  • [ ] put it in a dedicated doc file
  • [ ] may be shared in the maxGraph repository
  • [ ] possible lib that could be used to investigate for intersection: https://github.com/bpmn-io/path-intersection
