Support mermaid diagrams [UI]

Enable rendering of Mermaid diagrams in the UI to support visual representation of flows, graphs, and other structured diagrams within markdown or custom components.

Acceptance Criteria: • Detect and parse Mermaid code blocks. • Render diagrams using Mermaid.js in the frontend. • Ensure responsiveness • Graceful fallback or error message for invalid diagrams.

Context: This will enhance readability and improve visualization in documentation, chat responses, or agent outputs that include Mermaid syntax. Potpie uses assistant-ui for chat components in the main chat screen, this change should be compatible.
