Rename `pony-stable` to `tack`

Folks are confusing stable with thinking its the stable release of Pony. We initially discussed renaming to stable but @jemc pointed out that could be confusing as well.

We would need to rename the repo, and any packages such as brew etc as well as check all documentation.

Please submit your thoughts on names below and we can vote on them. If you like a particular name please use the 👍 reaction.

The shorter the name, the better. @mfelsche's "tack" is short, related to horses and is also a verb that basically means "attach". Pretty smart, if you ask me.

German "cute" word for stable. There's also a saying "das Leben ist kein Ponyhof", roughly translating to "life is not a party". Yup, that's how we Germans roll. lässt das Mikrofon fallen

So far tack and rodeo are in the lead with six :+1: votes each at the time of this comment.

I did a quick search for name collisions:

• Rodeo, A Native Python IDE for Data Science
  • Note that this software package does indeed have a executable named rodeo, which may clash in a user's PATH.

I couldn't find a name collision for tack that seemed like it might cause a problem.

As a result, I'm going to remove my vote for rodeo and keep my vote for tack, which will put tack in the lead.

While we're renaming stable, may I suggest renaming bundle.json to tack.json? We can temporarily support both (with a warning?) for a bit.
