💡 [Feature]: Update some dependencies and Node.js version used for development

🎯 Aim of the feature

The aim is to do a bit of house keeping. Some parts of it is needed to align with the upcoming stack update of SPFx dependencies and also needed for #288 The aim would be to update

• React to 19
• Node.js to 22 and along the way npm to 11
• Typescript to 5... this needs to be double checked it may be done in VS Code extensibility
