Additional context For example, in a ticket, i need to have a table of user (GLPI Actor) and a role (a select with predefined values) : User 1 | Member User 2 | Project manager

This looks like an enhancement for GLPI, am I right ?

There is already a table glpi_tickets_users which contains the actors of a ticket (requesters, watchers, assigned). Unfoatunately it does not supports roles like "Member" or "Project Manager". I think you should be able to handle that using groups with proper name and containing your users.
