Move to a full `vitest` setup in `main` (Volto 19) paired with `Cookieplone`

We need to create a way to build a different boilerplate in Cookieplone if you select a Volto "alpha", not sure if we will go away without that. /cc @ericof

Volto 18 already supports Vitest for add-ons according to https://6.docs.plone.org/volto/development/add-ons/test-add-ons-18.html. Can we just update the template to use vitest for new add-ons?

We could do that yeah... I didn't consider this. If that's an acceptable thing for all new add-ons (I guess it is).

https://github.com/kitconcept/volto-bm3-compat this is the first add-on that uses it.
