Plex Media Player is transcoding everything after more than 24 hours

So far everything I want is working as it should, all audio passthrough is working (DTS-HD, TrueHD) and video hardware acceleration is working, remote control using the plex mobile iOS app is working. (The last one is the reason I built it myself, because LE9 with KODI in it is lacking the ability to control Plex with the mobile plex app).
I have 2 Intel NUC’s with ubuntu linux 16.04 on it which are running Plex Media Player, I turned off every sleep and hibernate function as I could find. Plexmediaplayer is running fine for about 24 hours, but when it isn’t used for more than 24 - 36 hours it is transcoding everything to 720p 2 mbps.
I tested with and without these settings below to try to find out what the cause of the problem is.
At PMS: I checked “Treat WAN IP As LAN Bandwidth” under settings - network. I set Limit remote stream bitrate at “original/no limit” under settings - remote access Internet Upload Speed is set at 40 mbps.
At PMP: Settings - Video: Original Remote and Online quality are set at “Original” Allow direct play and allow direct stream are checked. Manual servers are set at the local ip of PMS.
When I reboot the Intel NUC everything works fine for about 24 hours and all is streaming at direct play, when I don’t use the NUC for a while everything gets transcoded to 720p 2mbps.
