Fix issues with nightly perf tool runs

We have a GitHub action that runs the pixie perf tool. This has been failing for a number of months, but is valuable for detecting regressions and performance history over time.

Current outstanding issues:

  • [x] Recent (v109) Container OS instances are unable to start the socket tracer (#1900)
  • [ ] Sock shop demo does not successfully deploy
  • [ ] Skaffold should use x86_64_sysroot profile to avoid glibc issues with migration to Ubuntu 24.04 (#1885)

Expected behavior The nightly GitHub action should succeed.
