As some CLI applications out there does have an `--overwrite` option, would be nice to have something like this here too.

Everything is fine, cover much of cases in terms of Open Source Contributor Agreement. Maybe we can make some trimestral reviews and see whatelse could be added or/and excluded, so...

@DrDaveD I guess that this issue can be worked as it concerns the docs. I'll take a deep look and investigate if there is some non-descriptive enough about `singularity instances`.
