Any examples on usage of Sale? To disable E-Check

I am having issues with one of my clients where people are trying to scam using E-Checks, id like a way to disable this in the SDK.

I am currently using Payment to create an redirect to paypal etc, but I see that Sale.php has support for setPaymentMode to instant, how do i utilize this?
