fix(richtext-lexical): annotation is necessary ts error

Description

This commit fixes The inferred type of 'name' cannot be named without a reference to '../../../node_modules/@payloadcms/richtext-lexical/dist/types'. This is likely not portable. A type annotation is necessary. ts (2742) ts error.

When using lexicalEditor({}) to construct payload config ts reports error mentioned above. This PR fixes it by exposing necessary types from the richtext-lexical package.

Error is present on version 3.0.0-beta.100
