Expected Latency?

I saw that you mentioned that there is some latency in the implementation, do you have any estimate on how much?

And I'm assuming this is the latency observed when one moves the camera to when the segmented output is visualised?

This is an important problem, and I'd like to give you an exact answer. However, I don't have much time at the moment. Could you try to tackle it and make a PR if you find anything?
