Add documentation that explains how to hook up Qdrant vector db

@mnutt I merged your PR https://github.com/pashpashpash/vault-ai/pull/62 but it would be nice to add documentation to the Readme that explains the following:

• how to set up qdrant
• how to run qdrant db locally
• how to test to see if qdrant is working properly
• instructions on how to add the qdrant api key/credentials to the secret folder in repo

I would be happy to review and merge if someone puts in a PR with this documentation!
