Add demo user creation and update package files

This pull request introduces the following changes:

• Added createDemoUser.js to automatically create a demo user in the database.
• Updated package.json and package-lock.json with new scripts for development and production.
• Added demo login information to README.md for easier testing of the application.
• Ensures that users can try the application without creating an account.
