pangeo_notebook_version appears to be a required field in meta.yaml (e.g., https://github.com/pangeo-forge/staged-recipes/pull/175#issuecomment-1224962366) but it is not covered by this introduction tutorial: https://pangeo-forge.readthedocs.io/en/latest/introduction_tutorial/intro_tutorial_part3.html
