Bump rxjs to v7

Version 7 introduces combineLatestWith, which deprecates the current combineLatest usage. This is an important and useful change that I'd like to introduce asap.

Untested, need to wait for the tests to run.

Due to the way rxjs fixed TS assertions, which is a much more appreciated change than any other for me in that version, we have to fix quite a number of TS errors. I'll try to look into it when I find the time
