Unfortunately this website is protected by Cloudflare. And Cloudflare consider we are a bot scraping the website (which is not that wrong). Unless you know the site admin and can ask them to whitelist our IP (in Cloudflare settings), there is probably not much we can do.

There is now an official wiki which does not use Cloudflare The content was imported from the unofficial wiki https://wiki.nixos.org/wiki/NixOS_Wiki

It uses mediawiki

My bad, this is not exactly the same content, or at least it is clearly a fork.

I suggest to create a new ZIM request for wiki.nixos.org, and see which one we achieved to ZIM first.
