Update README.md

With the migration to the new UI, many bits of README.md are now totally outdated:

  • requirements to run the scraper are wrong, we should recommend to use the Docker image
  • requirements and instructions to develop the scraper are wrong, we should probably redirect developers to CONTRIBUTING.md
  • screenshots are outdated

Nothing critical or hard to fixed, but this needs to be done before 4.0 release
