How to use Plugins for dataset exporting

I want to export my dataset into the mots format. However it is not in the default dataset environment. The mots exporter and importer classes are implemented as Plugins but I am pretty lost on how to actually use it.

I can't really find any good example or explanation on how to create an environment class complimented with a plugin, if that is the way to use it.

I appreciate any help
