Update developer guide to reflect plugin split

In https://github.com/opensearch-project/search-processor/pull/191, we split the repository into two separate Gradle subprojects that would each build a processor-specific plugin.

We should update the developer guide to reflect this split and explain how to test/run each subproject and/or the whole repository.
