Event Type table - add more detailed descriptions

There is an Event Types section which lists every possible event_type value with a very brief description.

I do not believe there is enough clarity in these descriptions right now.

These descriptions should be more detailed and expanded upon where possible.

Additional context

These were added as part of the 1.0.0 release process so they could be enumerated in one place in the spec.
