Change Docker images to be based on Amazon Linux 2

Is your feature request related to a problem? Please describe. The Docker images are currently based on CentOS 7, which stopped receiving full updates in Q4 2020 (https://wiki.centos.org/About/Product). We need to move to a supported operating system.

Describe the solution you'd like Amazon Linux 2 is supported until June 30, 2023 (https://aws.amazon.com/amazon-linux-2/faqs/). It seems like a good option for a stability-focused, long-term support distro.

Describe alternatives you've considered CentOS 8 is only supported until 2021; Ubuntu would be OK but it's more aimed at desktops than servers. Other distros might be fine, too. We can always add more Docker images if there is demand for multiple distros.

We seem to be hitting some silly CentOS 7 error on our OpenShift cluster, so that our ODFE pods would fall into a crash loop. I'm really hoping that it'll go away once we switch to a release based on AmazonLinux2.

The implementation seems to be quite done, is there any timeline when the AL2 images will be available on docker hub? Thanks!

@kanchev We just released OpenSearch Beta on Docker that uses AL2. Please try the Beta release and provide your feedback.

Note: OpenSearch is still in Beta release hence it's not recommended for production use yet.
