bindings: ProcfsBase is a little ugly to match against/use

This is primarily an issue with the Go bindings (which don't expose (*procfs.Handle).open) but not being able to really switch effectively on ProcfsBase is kinda unergonomic as a user, as it means you can't store a ProcfsBase and then later switch on which Open* variant you want to use...
