Mojaloop: Update use case for merchant proximity payment (QR Code) with new Payment Hub EE architecture and lab environment

With the new payment hub lab environment in Azure and with the new Payment Hub EE Architecture, we need to update the use case for the merchant proximity payment.

First we need to associate the self-service users with the customers and then integrate with new endpoints for PH-EE and environment details.
