Wrong version info in meson.build and CMakeList.txt

The last release has the wrong version information in meson.build and CMakeList.txt. I already fixed this in branch stable-1.2 and we could do an release there, v1.2.2 which fixes this.

Doh - yeah this happens me a lot with releases... :) No worries! I'd say leave it - its a small issue, and making packagers re-package isn't worth the effort now. lets hold off and merge a few useful things, and see how we go towards the next linux release day?
