Refactor logs exported object to match proto

Considering that logs is still underscore-prefixed, would this be a good opportunity to refactor the exported object to match the OTLP log proto as we did for metrics?

@sumit-158 this may not really be the good first issue so I am go remove that tag so I would suggest picking some different good first issue to get you familiar with project.
