[opentelemetry-demo] Add more comprehensive CI scenarios

Currently the CI for the demo chart only tests an install of the default config. We should add CI scenarios to cover expected/complicated use cases so that the demo has better test coverage. Increased test coverage will make it easier to validate changes.
