Update docs and helm repos with issues related to merged PRs in demo

Whenever a PR is merged in the demo repo, we should add an issue to the docs and/or helm-charts repos to indicate a change will be required to be kept up to date with the latest demo version. Perhaps we can use GitHub labels to help drive this functionality. docs-update-required, helm-update-required, etc.
