Suggestion: Flag to override `varModules`

Hi guys,

excellent plugin. May I suggest an option to override the varModules. Case is that I only need color, which means I have to add false to everything else.

I'd love to suggest using a sub-prop extend as tailwind.config does, but that would break the established convention. - Mabye in v.2 =)

This would be very nice! I have the exact same use-case as @gnimmelf. I think it's worth a new major version with breaking change.
