Resonator: fix UI callbacks with midi controllers and params menu

Hi! I've been enjoying mi-eng a lot recently, especially resonator, but noticed the UI wasn't updating when the params changed (either through the menu or midi). This should hopefully fix it, and I also added the option to change the pitch based on incoming midi.
