How to create APDU log files

Would it be possible to document how the two test files (Visa & Mastercard) were created?

I assume that "R-apdu" and "C-apdu" are for reader and card?

Is there a possibility to record a rader/card transaction and capture it to a file like the demo ones? Or were those files manually created?
