[FW][FIX] pos_restaurant: add function used to be overridden

We added a function in the ticket screen in order to override it in the modules pos_urban_piper and pos_blackbox_be.

@manv-afk @davidmonnom while this was properly forward-ported, at least one co-dependent PR (odoo/enterprise#88199) did not succeed. You will need to fix it before this can be merged.

Both this PR and the others will need to be approved via @robodoo r+ as they are all considered “in conflict”.
