documentation [ADD] spreadsheet: global filters

Hi @larm-odoo, thank you for your work on this PR! This is off to a great start, and lays a solid foundation, but there are some gaps that I want to fill in. Specifically around the following:

Differentiate between general table filters and global filters (global filters being what this doc covers)
Explain the connection between global filters and pivot/list/chart data
Expand on Field Matching
Expand on the Date filter's Period Offset
Provide more specific examples
Restructure some content

I think it will be easiest for me to communicate these changes by making a second commit and then we can review? c.c @odoo/spreadsheet-doc-review
