Improve pipeline information shown on the UI

Summary

In the current system we do have multiple things that the user can see, but we need to add more metrics which can help for better observability and debuggability.

What change needs making? This is not an exhaustive list, will keep on adding items here

• [ ] Jetstream information like last message read, processed, acked
• [ ] gRPC server, client status (running, waiting, killed)
