Include mock data

To make this project more useful for beginners, I think it would be helpful to include steps for creating a sample ES index in the README. If I manage to stumble through this and get it working I'll submit a PR with the curl commands for indexing, mapping, and posting sample docs.

In the meantime, any clarifications to getting this hooked up to a simple ES index would be greatly appreciated.
